Cooking potatoes in milk: when it makes sense

The American chef Rosemary Gill revealed her own secret on TikTok in autumn 2024. She says: The creamiest mashed potatoes can be made her way. She explained in a video: “Potatoes are like pasta, they release starch into the cooking liquid. And that then turns into liquid gold!” If you cook your potatoes in water, simply pour the “valuable starch” down the drain. According to Rosemary Gill, a waste! If you cook the potatoes in milk, you don't have to drain anything, but you can puree the potatoes directly in the milk. This, according to the chef, gives you “lush, silky, creamy mashed potatoes.”
Reactions to the cooking video are mixed
A big plus point, according to chef Gill: Thanks to the milk, you can do without cream when making mashed potatoes. This saves you some calories. While many people are excited about the idea of cooking potatoes in milk, others remain skeptical. “It looks like soup“, it says, among other things. Others primarily see financial problems, since milk is significantly more expensive than water: “Milk instead of water, in this economic situation?!”
