Öko-Test tested 21 crispbreads – and a third of them failed. Where do the bad grades come from? And which brands can you buy without worry?
Acrylamide in crispbread is apparently unavoidable
Crispy, light, healthy – that’s the reputation of crispbread. Does it do justice to that? Öko-Test took a closer look at 21 products made from whole rye, nine of which have an organic seal. In focus: especially acrylamide, which can be produced during baking and is considered to be carcinogenic, as well as pesticide residues.
The result is sobering, because there is acrylamide in every single crispbread – sometimes only in traces, sometimes in significantly increased amounts. In addition, there are multiple residues of pesticides, especially in conventional products. Since, according to Öko-Test, it has not been conclusively clarified which interactions these can trigger in the body, there is a deduction in marks here. In the end, only a few are really convincing: five products perform “very good”, three others at least “good”.

Crumbled: The test losers
It failed across the board Baker's crowning crispbread whole grain from Penny (Brandt baked goods, 1.29 euros per 250 grams). The acrylamide content that the laboratory detected even exceeds the EU standard. If this is exceeded, the manufacturer must review measures to minimize it, but can continue to sell the product, according to Öko-Test. Traces of five pesticides were also found in it. In the end, the crispbread ended up in the deep red zone with “unsatisfactory”.
Just like that Kornmühle crispbread rye crisps from Netto (1.29 euros per 250 grams). Here too, the laboratory found traces of five pesticides; according to Öko-Test, the acrylamide content is significantly increased. Both providers stated that they had found less acrylamide in a sample from the same batch.

If the Öko-Test has its way, it's worth reaching for the organic shelf when it comes to crispbread – because four of the five test winners are here.
