Anyone who has seen the queues in front of boutiques in Paris, London or Singapore quickly knows that Cédric Grolet is much more than just an ordinary pâtissier. His deceptively real fruits made from sugar and mousse have sparked unprecedented hype on social networks and made him a rock star in modern baking. With his iconic trompe l'oeil creations he blurs the boundaries between craft and fine art.

If you don't feel like waiting in line, you can now try your hand at the sweet fruits yourself. In his book “Fruits” Grolet shares a variety of recipes.
Lemon tarts based on Cédric Grolet
Baking tarts by Cédric Grolet is no child's play. The world-famous lemon is created in three steps, with the first one – the preparation of a yuzu ganache – having to be done the day before preparation.
Ingredients for the whipped yuzu ganache:

The day before, soak the gelatine in cold water for 20 minutes.

Bring half of the cream to the boil and add the gelatine.

Gradually pour over the chopped chocolate coating and emulsify.

Add the remaining cold cream, then stir in the yuzu juice.

Mix with the hand blender.

Pour into a container and cover directly with cling film.

Let rest in the refrigerator for twelve hours.

Bring water and lemon juice to the boil, mix the sugar with agar-agar and add. Let cook for two minutes.

Pour the mixture into a container in a thin layer and place in the refrigerator to cool.

Mix with the hand blender, making sure not to incorporate any air.

Finely chop the mint and finely chop the poached lemons. Add the caviar lime and lemon fillets.

Fill into 3.5 cm diameter hemispherical molds and freeze for two hours.

Whip the very cold yuzu ganache and fill it into 4.5 cm diameter hemispherical molds.

Place a layer of lemon jam in the middle and place in the freezer for an hour.

Make the yellow coating, cool down to 25°C and dip in the lemons.

Secure the lemons in a small area with marzipan on a tray.
Yellow coating? Please what? As Dylan Do also reveals on Instagram, it is ultimately nothing more than a mixture of 250 grams of cocoa butter, 250 grams of white chocolate and four grams of fat-soluble yellow dye.
Then: Lightly brush the lemons with warm, neutral icing. Mix kirsch with gold powder and strain through a pointed sieve. Pour into the spray gun and spray the lemons with it. Place a lemon leaf on each lemon.
