
When the Bòn Dì restaurant on Fulda's Friedrichstrasse suddenly closed a few weeks ago, it raised questions among visitors to the restaurant. Now there's news: Bòn Dì will return.
Fulda – The new tenant Giovanni Mattera already has plenty of gastronomic experience: his family has been running the La Romantica restaurant for years, just a few steps away from Bòn Dì. In the future he will take on a dual role, because in addition to his work at La Romantica, where he will continue to work, he will be taking on the responsibility of running his own restaurant for the first time with Bòn Dì.
Bòn Dì in Fulda will soon open again – this is the new operator
The restaurant has family significance: it was once opened by Mattera's mother. Three years ago, the restaurant was subleased to employees. “That went well too,” says Giovanni Mattera looking back. There are private reasons why the restaurant was unexpectedly closed. The previous operators therefore went back to Italy. As a result, the Bòn Dì reverted to the Mattera family according to the lease agreement, explains the new operator.
With the renewed takeover, he not only wants to build on the previous years, but also give the restaurant a modern direction. “We want a new beginning with the reopening,” says Mattera. The name of the restaurant will remain the same, but a new logo and a revised concept will bring a breath of fresh air. In the future, the menu will only contain fresh pasta – including gluten-free and vegan versions, i.e. pasta without eggs.
When it comes to pizzas, the team relies on “Pizza Contemporeana”. This is a modern version of the Neapolitan pizza, which is based on a longer-matured, airy dough and a higher edge and allows more leeway in the choice of ingredients. “We have a real Italian concept,” emphasizes Giovanni Mattera. In addition to the food, guests should also be able to experience “Italian hospitality”. A practical point is also important to Mattera: “Vouchers will continue to be accepted – even if they were purchased from the previous operator.”
All employees who want to stay have been taken on
Anyone who visits the restaurant in the future will meet some familiar faces, because: “We have taken on all the employees who want to stay,” says Mattera. This also includes Andrea Cruz, who many guests will know from the service. He should continue to be an “important face” in Bòn Dì in the future.
Giovanni Mattera has not yet given an exact date for the reopening. But preparations are underway – and with fresh pasta, modern pizza and familiar faces, Bòn Dì will soon return in a new form. Until then, the guests have to wait and look forward to the restart.
