What a dessert dream!
Airy, light homemade pudding cream, fruity strawberries and fluffy biscuits – who can resist that? This creation is Johann Lafer's answer to the traditional tiramisu: “Germany greets Italy!” Looks really impressive, but is very easy to imitate. In the video, the professional chef shows how!
Separate eggs carefully. Bring the milk and vanilla powder to the boil in a saucepan. Beat egg yolks and sugar in a bowl with a whisk until fluffy. Add the cornstarch and stir in.
Pour in the hot vanilla milk, stirring constantly. Pour the mixture into a saucepan and stir over a low heat until a thick, pudding-like cream forms.
Pour the cream into a bowl and let it cool. Beat the egg whites until stiff peaks form and fold into the cooled cream.
Wash and clean the strawberries and, depending on their size, halve, quarter or roughly dice them. Chill half of the strawberries.
Mix the other half with the preserving sugar, the juice and the zest of half a lemon and put it in a pot, bring to the boil uncovered, puree with a hand blender and let it cool.
Place half of the ladyfingers in a shallow baking dish or shallow bowl. Spread half of the strawberry puree on top. Add half of the chilled strawberries, then half of the cream on top. Layer the remaining ingredients in the same way.
Sprinkle with a few toasted almond flakes or fresh mint if desired.
